Vegetarian Lasagna Recipe with Spinach and Ricotta: A Hearty and Healthy Meal

– 12 lasagna noodles
– 1 tablespoon olive oil

– 1 egg

– Salt and pepper to taste
– 2 cups marinara sauce

1. Preheat your oven to 375°F (190°C). Cook the lasagna noodles according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.

2. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic and cook until softened, about 5 minutes.

3. Add the chopped spinach to the skillet with the onion and garlic. Cook until the spinach has wilted, about 3-5 minutes. Remove from heat and let cool.

4. In a large mixing bowl, combine the ricotta cheese, egg, chopped basil, salt, and pepper. Add the cooled spinach mixture and mix well.

Repeat the layering process until you have used all the ingredients, ending with a layer of marinara sauce and mozzarella cheese on top.

6. Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 25 minutes, until the cheese is melted and bubbly.

7. Let the vegetarian lasagna cool for 10-15 minutes before slicing and serving.
